I really enjoy zucchini pancakes I think they’re a great lighter meal to switch things up with. The problem is no matter how I try to fry them they never turn out. It’s always just a raw pasty mess with a thin burnt layer on the bottom of my pan. I dunno what I’m doing wrong. I make sure to truly squeeze out as much water as I can before frying. Things I’ve tried: High heat Low heat Short cooking time Longer cooking time Thicker Thinner More oil Less oil No matter what they never turn out! What am I doing wrong?
