I've got a dozen duck eggs in my fridge that my roommate's bandmate gave us and we're trying to figure out what to make with them. I'm told they have big yolks; so, I'm thinking deviled eggs: Kewpie, dijon, Slap Ya Mamma, smoked paprika, and some scallion. My roommate wants to pickle some and I suggested making Korean drug eggs. An industry friend said they make great fried eggs, because that really lets you appreciate the richness of the yolks. That got me thinking about eggs over easy with chili oil and scallions over corned beef hash. What would you recommend? What're you're favorite duck egg dishes?
