I had some Uzbek Plov at a seemingly family/ community owned restaurant recently and it was fucking fantastic. I love eating and cooking food from cultures other than I grew up with. The restaurant Plov had lamb (shoulder?), long grain rice that was yellowish I assume from seasoning, rainbow carrots, onion, dried berries, and chickpeas. It did seem somewhat greasy, like the rice did not stick together at all. It was delicious though. I do have a brain injury and developmental disabilities, so I prefer to cook new recipes with my caregivers. I used this recipe and the following ingredients: - London broil - rainbow carrot - yellow onions - jasmine rice - mixed dried berries/ raisins - garlic head - frozen crushed garlic - cumin - paprika - crushed coriander (thought I had ground, turns out I only had whole, so I used a manual pepper grinder top) - MSG - salt, pepper - remembered the mixed berries/ raisins at the end I got the flavor right, but I overcooked the meat, accidentally dissolved the onions and half the carrots, forgot berries until the end so went with some raisins, and overcooked the rice. I know some of where I went wrong; for example when I was tasting to check if the rice was done, it didn’t occur to me that the top rice may be dry, accounting for the crunchy I was tasting. This led to me thinking the rice was undercooked, so I added more water and cooked for a little longer. Same thing happened, so repeated. Then when it was still crunchy, I gave up and mixed everything together as it said, and realized that the rice was overcooked. That said, I’m still considering it a win, but I want to try and get closer to the restaurant one. As for the overcooking, I’m thinking of cooking everything the way my gut told me to: Slice the onions and actually matchstick the carrots consistently. Puncture the dried berries. Sear meat with onions, add carrots, rice, seasonings and garlic, water, mix, and bring to boil reduce to simmer, and cook for about 20 minutes (add berries after 10). Remove the bay leaves, and mix to combine. Stir in some butter (and use less msg this time to account for the butter flavor).
