A home cook shares two hearty, budget-friendly recipes inspired by unexpected leftovers. The first transforms simple ingredients—onions, garlic, mushrooms, kidney beans, and pork—into a smoky, creamy stew, embracing a "plane crash" approach to flavorful meals. The second combines oven-baked sweet potato wedges with crispy battered cod, sautéed vegetables, and a rich beef stock butter sauce, seasoned with warm spices like madras curry and coriander. Images in bottom of post. 1) Plane crash, since i don't have a name for it ^^ Very regular dish. Onions, 2 small Garlic, 2 cloves Mushroom, 1 large Tomatoes, 4 large-ish Kidney beans, 300 grams drained Pork loin, 200 grams Cream, sour cream, cheese or whatever similar you like, 1 dl Basil, dried, 1 tbsp Smoke paprika spice, 1 tbsp Salt Pepper Was not going to use pork, but it was on offer, 10$a kilo so it's too good to pass up ^^ Dice onions, garlic, mushroom, tomatoes. Flush kidney beans, set to drain. Dice pork loin. Heat about 5 cl of olive oil, fry pork cubes first, stir well. Add onions and garlic after 2 minutes, stir well. Add mushrooms, lid on, stir occasionally for 3-4 minutes until moisture starts leaving it. Add kidney beans, stir, lid on. Lastly, add diced tomatoes and spices, stir well, lid on. Take lid off and stir every ~2 minutes for about 10 minutes. Add sour cream, cheese or whatever you use. Taste, season, stir. If you're happy, lid off, heat off, let rest for 15 minutes. It may nok look pretty but it's the tastiest plane crash you ever tasted ^^ Full of flavour. 2) Oven baked sweet potato, fish and crisp (battered cod) with sautéed onions and garlic, vegs, mushroom, tomatoes and beef stock butter sauce. Sweet potato, 2 medium-ish Onion, 1 medium Garlic, 2 cloves Cod, 4 medium sized pieces, prebattered or make own batter Vegetables, mixed; Broccoli, cauliflower, brussels sprouts, carrots, etc Olive oil Dairy butter Flour wholegrain Cream Beef stock, powdered or real Mild madras curry powder Coriander powder Parsley, dried or fresh (didn't have but should be there) Salt Pepper Wash and peel sweet potato. Cut in ~1.5 cm x 1.5 cm staves. Cut ends off tomatoes. Wash mushrooms. Set oven to 150C degrees fan or regular heat. Put sweet potato staves in a bowl. Add 2-3 cl olive oil. 1 tbsp mild madras, 1 teaspoon coriander powder, 1 tbsp parsley, salt and pepper. Mix well until all coated. Put sweet potato staves, mushrooms, tomatoes and battered cod to a baking tray with baking sheet on it, middle rack, 1 hour cooking time. Fine chop onion and garlic. Heat a small pan mid-high heat, 2-3 cl olive oil. Start frying them, then immediately turn heat to low. Stir often. After about 10-15 minutes, let them cook on very low heat for the rest of the 45 minutes. Stir occasionally. Start the sauce. Add 50 grams of dairy butter in a small pot, medium heat. Melt it, add ~40 grams of wholegrain flour, whisk it well together. Add 1 dl of wholefat cream, whisk well. Add 1 dl water, salt, pepper and 2 tbsp powdered beef stock. Whisk well, turn heat off. 30 minutes: Turn battered cod. 40 minutes: Put a medium sized pot half full of water on full heat, add vegetables. After they've boiled for 5 minutes, turn heat off. Last 10 minutes: Add water from vegetable pot to sauce and heat sauce, high heat until it boils. Whisk well, and keep adding water from veg pot until desired consistency. Turn heat off. Taste, add more spices if required. Check if batter is crispy, if not, turn oven on full and with fan for 5 minutes. Turn oven off, open door, let everything rest for 5 minutes before plating.
