Lightly grease a round 20 cm (8 inch) cake tin and line the base with baking paper. In the bowl of an electric mixer fitted with a beater attachment, cream the butter and sugar until pale and fluffy. Add the eggs, one at a time, beating well between each addition. Add the flour, mixed spice, tomato and sultanas and fold all of the ingredients together until well combined. Spoon into the prepared tin and cook for 50-60 minutes, or until a skewer inserted into the centre of the cake comes out clean.
