Always wanted to try this, had 3 potatoes leftover in fridge. Cut'em thick, put in water, boiled, turned off, left 15 minutes until half soft. Put on rack, let damp off for 1 hour. Heat olive oil in pan, add potatoes in it. Fry on mid-high heat for 15-20 minutes while stiring GENTLY (using big letters, because hot oil is murder and splashes easily). When they get proper browned, put on plate and let rest for 3-4 minutes, they stay hot a long time due to the oil: Homemade spice: 5 grams salt, 2.5 grams each dried parsley, basil, oregano, paprika, smoked paprika, 1 gram strong chili powder and 1 gram garlic powder. Grind in mortar (with pestle). The other stuff is leftover beef coated in wholegrain flour cooked in oil+butter, heated in the leftover oil. The potatoes turned out super nice, just should have cooked them for a few more minutes. Learning curve.
