I'm trying my hand at cooking pork belly, with which I'm fairly inexperienced. I found a simple recipe, which looks good (link below, in case you're wondering). The recipe specifies cooking time, but not target temperature.

The recipe specifies cooking time, but not target temperature. I know that pork generally is to be cooked at 145 degrees. Is this the case for pork belly? Given the amount of fat, I would imagine pork belly has a bit more leeway than some other pork cuts before it gets dried out.
