So, as part of improving my diet, I've started making these high protein flapjacks for a more robust snack food, I'll include the ingredients and recipe at the end. I'm still in the early stages of this, having only made two batches. However, I'm finding that they aren't lasting as long as I'd like, growing mould after about a week. The first batch I made I mixed some blueberries and kept the batch refrigerated, lasting 7 days; the second batch I opted instead for soft figs and didn't refrigerate, lasting only 5 days. At this point I don't know if it's the choice of milk, the fruit, the time in the oven, the refrigeration or something else I need to adjust to make these last longer, and I thought I'd ask for some input before wasting lots of food through trial and error. I don't want to make less as the oven dishes I have for making them are kind of the perfect size for this batch. I'm only having 1-2 portions a day so they really need to last 8-9 days ideally. I'd prefer not to take up space in the fridge if I don't have to, but I will if I need to (I'm guessing milk makes this all complicated). Are there any better milks to use? Does it need more time in the oven? Should I freeze half and defrost midweek? Please let me know what you would say the best things to try would be. Ingredients: -310ml cows' milk -125g peanut butter -60ml honey -210g oats -60g protein powder -1 tsp cinnamon -A pinch of salt -Dried/fresh fruit -10g cocoa powder (optional) Method: -Whisk honey, milk, and peanut butter -Mix in all other ingredients -Bake in a preheated 180°C oven for 20-25 minutes in baking paper lined oven tray -Remove from oven -Remove from tray once cooled sightly, transfer to wire rack Makes 14 portions ~150-170kcal each Definitely notably not as sweet or fatty as a normal flapjack, but tasty enough and pretty damn healthy. Great for a boost mid-morning/mid-afternoon.
