I am trying to recreate the classic N1 dish from the Xi'an Famous Foods local chain in NYC. There are a bunch of recipes online that claim to recreate it, but I haven't found anything that really replicates the flavors. I've tried the Woks of Life version (https://thewoksoflife.com/cumin-lamb-biang-biang-noodles) which is okay but not the same. I even found this (https://tastecooking.com/recipes/spicy-cumin-lamb/) recipe from Jason Wang (founder of XFF - I think this is the version in his XFF cookbook) but looking at the ingredients list I don't think this is the same as what they do in the restaurant either. For example, I'm pretty sure there's chiangking black vinegar in the dish. Has anyone had any luck in recreating this dish? submitted by /u/No_Employ1203 [link] [comments]
