I bought 2 plantains about 2 and a half weeks ago and about a week ago one of them turned yellow finally with a lot of black spots and it came out pretty good. My goal for these plantains was to pan fry them in coconut oil or butter to have them be sweet and a nice soft texture. However for one of these plantains the noticeable skin has been green for the longest time but it still has a large amount of black spots all over. I know that it comes down to the starches breaking down but it’s been so long that I wonder at what point does the color of the skin become a measurable factor of this??
