It’s been a while since I’ve done one of these. What’re you cooking this week? My planned menu is below. I love seeing what everyone cooks throughout a normal week and I want to steal your recipes and get inspiration! It’s (hopefully) one of the last really hot weeks of the summer. But we’re going to take advantage of it. Monday: Leftover pulled pork tacos with homemade corn tortillas. We’ll do them street style with cilantro, quick pickled red onions, and cotija. We made smoked salsa over the weekend so we’ll do that with chips as a bit of an app. Tuesday: Big A** Salad Night. Grilled chicken, spinach, strawberries, blue cheese, some type of nut, red onion, boiled egg, maybe some bacon, red onion with a balsamic dressing. Wednesday: Grilled flank steak with chimichurri and elotes (using up some leftover ingredients from Monday!) Thursday: We’ll be at a friend’s bbq. Friday: Date Night! Pasta al limone with some grilled shrimp. Saturday: Out with friends.
