I'm making italian beef for guests coming over tomorrow and decided slow cook the roast today before slicing and finishing tomorrow. The issue is that the meat is quite bland. It has a slight aroma of the spices used but barely any flavour.

It has a slight aroma of the spices used but barely any flavour. The Broth does have a slight kick to it before even reducing it but I'm not sure if t will be enough. I used the first recipe in this video: https://youtu.be/xrXDdlrcuKs?si=m2bmZo8ne7ft9E2e 2 quarts water 2 tsp paprika 1 tbsp celery seed 1 tbsp fennel seed 1 tsp onion powder 1 tbsp dried oregano 1 tsp dried thyme 1 tsp dried parsley 2 tsp kosher salt 1 tsp black peppercorns 1 tsp coriander seeds ½ tsp red pepper flakes 2 large bay leaves ¼ tsp ground allspice 2 beef bouillon cubes 8 whole garlic cloves (unpeeled, optional) I could not find any beef stock or cubes so I used chicken cubes instead but I did sear the meat before adding the water and spices. I also used a smaller piece of beef(but with the same amount of spices) so it was done in around 25 minutes. I'm not sure what do now. Maybe I could roast a few onions and and add it to the reduced broth to make a thicker gravy like sauce?
