Hi everyone! This roasted chicken recipe, pasted below, was one of my favorites as a kid, and I'd like to try making it myself. But I don't want to roast a whole chicken. I'd rather do all of either skin-on chicken breasts or thighs or drumsticks (no idea which would work best): they're easier to cook evenly since they're all the same size, I can make fewer servings and avoid trying to find freezer space for leftovers, and I don't have to carve the bird myself. How would one go about modifying the recipe? Is it even possible? -------------------------------------------------------------------------------- Recipe: 2 tsp. salt 1 tsp. paprika 3/4 tsp. cayenne pepper 1/2 tsp. onion powder 1/2 tsp. thyme 1/2 tsp. white pepper 1/4 tsp. garlic powder 1/4 tsp. black pepper 1 whole roasting chicken, about 3 pounds 1 cup chopped onions Mix spices and rub on inside and outside of chicken. Let it sit overnight in the fridge in a plastic bag. To cook, stuff with onion and roast uncovered, breast side down, in a roasting pan at 250°F (basting occasionally with pan juices) for about 5 hours or until juices start to caramelize and chicken is golden brown and the internal temp reaches at least 155°.
