I'm thinking of getting some, but I don't exactly know how to pick out good steak. I just know to look for marbling, but outside of that, idk what to look for. Here's a pic I took earlier today: https://imgur.com/AWPvb6N. Besides marbling, there are some with large patches of white -- presumably that's fat. Are those patches desirable?
