A few weeks back I tried to make this simple sweet potato/lentil recipe I found on YouTube. I followed the methodology shown (Julienne a sweet potato and fry it up with herbs and spices; blend lentils with herbs/spices and milk, then blend again now with baking powder in it; then mix lentil 'batter' and sweet potato stuff together and fry into a sort of patty). Five minute video, looks easy, great. But it didn't work for me. The mixture that came out my blender was much more, hmm, liquid than what is shown in the video. In the video the blended lentil 'batter'/mix is quite thick by the time it comes out the blender. Mine was more liquid, and when I then tried to 'fry up' the resultant lentil/sweet potato mixture, it never firmed into a patty. It just stayed a sort of gloopy soup in the pan that burnt on the bottom and never solidified into the patty thing. The only things I did different to the video as far as I'm aware are that I used whole milk instead of non-dairy milk; and I used a can of lentils (drained and rinsed) instead of starting off with dry lentils, and so I skipped the step of soaking the lentils for 3 hours. IIRC my lentils were also a different colour as I couldn't get yellow, but I don't think lentil colour should matter? Please can someone help figure out why my attempt failed? Was it the milk? The lentils? Did I not mix for long enough? (Though IIRC I kept blending for a long time and it just never thickened.) Or are we suspecting the baking powder - should it have been bicarb of soda instead? (I'm in the UK.) Or did I do something else wrong?
