We all know the "show me your omelette" test of cooking prowess, and I am especially enamored with Anthony Bourdain's pitch for Boeuf Bourguignon as the thing to cook for people who want to impress without needing a lot of skill, or time, or motivation. But my thing in this vein is definitely Chicken Milanese. It is so easy: a pounding that I do with my preschooler, a brief brining, and a quick shallow fry yield the MOST DELICIOUS and impressive meal when accompanied by an arugula salad with tomato and a lemon vinaigrette. I had it a couple times on a trip to Argentina and have never since backed down from this notion. So, what do you fine people think of Chicken Milanese?
