But I recently roasted my own chicken and tried the same method, and the broth ended up much less gelatinous. Not saying it was bad by any means, but it got me thinking - is it just basically quick and easy meat jello because Costco pre-injects their chickens with their own broth? And that is making its way into my own broth? If you refrigerate a Costco chicken, there is always some very gelatinous broth at the bottom of the bag.
