π³ HEREβS HOW TO MAKE IT A quick and spicy chicken dish, perfect for two. π₯ INGREDIENTS β’ 350g Chicken breast or thighs β’ 2 Garlic cloves β’ Thumb-sized piece of ginger β’ 1 Red chilli β’ 2 Banana peppers β’ 1/2 Large red onion β’ Oil, for frying β’ Water, as needed MARINADE β’ 1 tsp Chilli powder β’ 1/2 tsp Turmeric powder β’ 1/2 tsp Ground black pepper β’ 1/2 tsp Sri Lankan dark roasted curry powder β’ 1/2 tsp Salt SAUCE β’ 1 tbsp Chilli flakes β’ 1 tbsp Soy sauce β’ 1 tsp Oyster sauce β’ 4 tbsp Ketchup β’ 1 tsp Sugar β’ 5 tbsp Water β’ 1/2 tsp Salt π³ π₯ METHOD β’ Cut the chicken into bite-sized pieces and coat with all the marinade ingredients. Set aside. β’ Mix all the sauce ingredients in a bowl, stirring until the sugar and salt dissolve. β’ Roughly chop the ginger and garlic, coarsely chop the red chilli, and slice the banana peppers and red onion. β’ Heat a splash of oil in a pan over medium-high heat. Sear the chicken until charred on the outside but not fully cooked through, then remove and set aside. β’ Add more oil to the same pan and stir-fry the ginger, garlic, and red chilli for 30 seconds until fragrant. β’ Add the red onion and banana peppers and stir-fry for about 1 minute. β’ Return the chicken and stir-fry for about 2 minutes. β’ Add the sauce and stir constantly for another 2 minutes, until everything is evenly coated and glossy. β’ Add a splash of water if needed to achieve your desired consistency.
