Yesterday I made both of these carnitas recipes side by side, and they were both a huge hit. Sorry, I completely forgot to take pictures. I skipped the salsas and just focused on the carnitas. Matt's recipe ends with the meat in a cast iron skillet, so it developed a crispier exterior than the Serious Eats version. Beyond that, I honestly could not tell much difference. The flavor, texture, and overall enjoyment were remarkably similar. Some people preferred the Serious Eats version, while others preferred Matt Matheson's. Next time, I think I'll make the Serious Eats recipe, because cooking in lard turns some people off and it's a little easier to clean up afterward, then split the batch and crisp half in the oven and half in a cast iron skillet. submitted by /u/timberjam [link] [comments]
