Following a recipe for mujadara that involves caramelizing diced onions. The recipe instructs medium-high heat for about 30-40 minutes. In the accompanying YouTube video her onions look frothy and move freely when she swirls them in the pan: https://www.youtube.com/watch?v=JDtDh5PLSo4 Timestamp: 1:58 I'm confused. Mine are dry as hell and I had to keep adding water to them to keep them from burning. What am I doing wrong? Or is she adding water and just not saying? Did I not add enough oil? Salt? Or is it the pan? (I'm using stainless steel and it looks like she is using ceramic). I know real life doesn't always (usually) turn out like YT videos lol, but any insight would be appreciated.
