UPDATE: Looks like there’s a big difference between Jamaican and Trinidadian callaloo. Does anyone know which one this is? β€” Last year towards the end of the summer, I picked up a callaloo plant at a local Caribbean festival, not knowing anything about it. It survived the winter and is now growing strong, but I don’t know what to make with my first harvest. Most of the things I’ve found online look like stews, and since this doesn’t sound super appealing to me, I wanted to know if anyone else knew of other suggestions. Maybe egg rolls? I’m a big fan of raw leafy greens, but it looks like these need to be cooked, so I’m just trying to figure out an alternate use for this which doesn’t end up being super mushy.
