I had some live Manila clams delivered from 99 Ranch Market in Southern California, and I was planning to make linguine with clams tonight. Pic below: https://imgur.com/a/OfXgSGk When I unpacked them, I noticed some of the shells were open, and a few had their little foot/tongue sticking out. I read that you're supposed to tap any open clams and see if they close, but the ones I tapped didn't immediately respond. Right now I have them stored in the fridge in a colander over a bowl of ice (so they're not sitting in water), with a damp paper towel over the top. They don't have any bad odor, but I'm wondering if they're still safe to cook. Should I toss any that stay open after tapping, or is it okay to cook them as long as they smell fresh?
